Apple Mountain Pie

Autumn is my favorite season of flavors. Every year I am always inspired to create some new dishes that highlight the essence of the season. Dishes that make you want to curl up with a warm blankie around a campfire. These campfire apple mountain pies are the epitome of the perfect autumn dish!
I'm not going to lie...mountain pies are relatively new to me. I ate my very first mountain pie just this past summer! I'm convinced they are more of a Pennsylvania thing. Maybe that is because my first experience was with a large group of PA natives who were all equally baffled by my lack of mountain pie knowledge. With that, my husband (whom you can take one look at and know he is from NW PA) helped me craft these lovely mountain pies while on a camping trip (ironically in the Allegheny National Forest).
Just like all of my recipes, this will be relatively vague as there is a lot of room for personalizing based on your preferences.
Ingredients:
Premade pie crust (or you can make from scratch if you are feeling ambitious)
Honeycrisp Apples
Maple Syrup (I used a smoked pecan maple syrup)
Lemon Juice
Unsalted Butter
Brown Sugar
Peace Blends Pumpkin Spice
Peace Blends Vanilla Cinnamon Sugar
Corn Starch
Instructions:
Cube apples and combine in a stock pot with maple syrup, lemon juice, unsalted butter, brown sugar, and Pumpkin Spice. Simmer over medium heat until apples begin to soften. Taste and add Vanilla Cinnamon Sugar and more Pumpkin Spice as needed.
Stir in corn starch a teaspoon at a time until thickened. Remove from heat. Prepare mountain pie irons by preheating over a campfire and seasoning with unsalted butter. Be generous with the butter in this step as it will help prevent the pie crust from sticking. Carefully remove the mountain pie makers from the fire and line each side with pie dough, making sure the dough is slightly larger than the iron so that it creates a good seal when closed. Generously fill one side of the iron with the apple mixture, then attached the two irons back together. Place on a coal bed in the fire. Make sure to rotate every few minutes to ensure even coating without burning. Once your crust is golden brown, carefully remove from the fire and remove the mountain pie from the iron. Top with melted butter and Vanilla Cinnamon Sugar.
Enjoy around the campfire with some good friends!
